Microwave Mocha Pudding

This recipe makes quite a bit and is actually really filling. It’s best made just before serving as the sauce thickens up quite quickly. Oh and definitely make sure you cook this in a deep dish…you don’t want the sauce bubbling over midway through cooking!

Ingredients

  • 60g butter
  • 1½ cups self raising flour
  • 3/4 C - 1 C caster sugar(depending on your preference)
  • ¼ cup cocoa
  • ¾ cup milk
  • 2 teaspoons vanilla

Sauce

  • 1/2 cup brown sugar, lightly packed(you may use more if you want more sauce)
  • 1/3 cup cocoa, extra
  • 2 tablespoons coffee granules
  • 2 cups boiling water

Directions

  1. Place butter in a bowl and melt in the microwave on HIGH for 1 minute.
  2. Mix sifted flour, sugar and cocoa, milk and vanilla in a large bowl then add melted butter. Beat until smooth with a wooden spoon.
  3. Evenly spread batter in a medium sized ceramic dish(make sure it’s quite deep so the sauce doesn’t overflow).
  4. Sprinkle the top of the batter with the brown sugar and extra cocoa. Pour boiling water over mixture carefully.
  5. Microwave on HIGH 12 minutes, or until just cooked in centre; stand 5 minutes before serving with cream or icecream.
